  1. Preheat oven to 350 degrees. Combine all ingredients and mix well. Scoop into rounded balls and place on cookie sheet. Bake for 10-15 minutes or until cookies are golden and fragrant.

Easy Blueberry Chia Pudding
I love to use walnut, almond or cashew milk from Elmhurst Farms to make this recipe - they don't use any additives or stabilizers, just nuts and water to make their milks. And they are delicious! For those who are interested in alternatives to cow's milk (whether it be due to allergies, intolerances or simply the desire to live a vegan lifestyle) be sure to read product labels carefully. Many brands may have a great tasting product, but contain ingredients that may cause bloating, gas, or digestive issues for some. Be on the look out for stabilizers such as xanthan gum, locust bean gum, gellan gum, guar gum, and gum acacia if you have any GI concerns.

  1. Combine milk, vanilla, chia and sweetener in a glass jar. Shake or stir well to combine and place in fridge for several hours or overnight. Top with fresh or frozen blueberries before serving.

Chocolate Superfood Waffles
How do you take a plain boring waffle and transform it into a rich, flavorful fiber and nutrient dense version of itself that the whole family will love? Simple! Just add seeds...and raw chocolate powder!! The texture,  body, and additional omega 3 rich nutrients that superfood seeds such as chia and flax add to the batter will make you want to triple this recipe and freeze them up for future servings- they won't last long I can guarantee. And adding raw chocolate was a no brainer. High in anti oxidants and flavor- winning combo! I first tested this recipe with 1st and 2nd graders at the Eliot School in the North End of Boston and we did not have a drop of batter left in our mixing bowl! Since we made them around the holidays, we made them extra festive by adding crushed candy canes as a topping, on a dollop of fresh whipped cream. Fresh fruit and chopped nuts make nice toppings too! YUM!!

  1. Prepare waffle mix according to package directions. Add seeds, powder, and 1/4 cup of additional water to recipe to account for the bulk from additional ingredients. Serve topped with fresh blueberries and sliced blanched almonds.
