Kitchen Essentials

Healthy eating doesn’t have to be complicated, time-consuming, or expensive. In fact, some of the best ways to improve your nutrition start right in your own kitchen.

As a Registered Dietitian and someone who loves to cook, I’ve learned that having the right tools makes preparing fresh, nutritious meals easier, faster, and much more enjoyable.

From simplifying meal prep to making vegetables more exciting, these are six of my favorite kitchen essentials. They’re practical, versatile, and can help make healthy cooking part of everyday life.

1. Instant Pot

One of the biggest barriers to cooking at home is the belief that preparing healthy meals takes too much time or effort. That’s where the Instant Pot comes in.

I purchased mine during the pandemic, and it quickly became one of the most frequently used appliances in my kitchen. I use it several times a week for soups, stews, beans, lentils, whole grains, and proteins.

With seven functions in one appliance, it can serve as a pressure cooker, slow cooker, rice cooker, steamer, yogurt maker, sauté pan, and food warmer.

It’s especially helpful for batch cooking, allowing you to prepare nutritious ingredients in advance and use them throughout the week.

My Nutrition Tip: Batch-cook dried beans or lentils for the week. They’re affordable, rich in plant protein and fiber, and perfect for salads, soups, grain bowls, and vegetable dishes.

2. Vegetable Spiralizer

Looking for a simple way to eat more vegetables? A spiralizer can completely transform how you prepare and serve them.

I love my Paderno spiralizer because it makes vegetables more versatile and fun to eat. With multiple blade options, you can create noodles and ribbons from zucchini, carrots, sweet potatoes, beets, and other firm vegetables.

Preparing your own vegetable noodles can save money compared with purchasing pre-cut options. Spiralizing just before cooking or serving also helps maintain freshness and texture.

Vegetable noodles are a great addition to pasta dishes, stir-fries, salads, and grain bowls.

My Nutrition Tip: Combine zucchini noodles with whole-grain pasta, fresh tomato sauce, olive oil, and Parmesan. You’ll add vegetables and volume while still enjoying traditional pasta.

3. Microplane Zester

Sometimes the smallest kitchen tools make the biggest difference. A quality Microplane zester is one of my favorites for adding fresh, vibrant flavor to meals.

The colorful outer peel of lemons, limes, and oranges contains aromatic oils and naturally occurring plant compounds, including flavonoids.

Adding citrus zest creates a burst of flavor without relying on excess salt, sugar, or heavy sauces. I use mine frequently for salad dressings, marinades, roasted vegetables, and seafood.

It’s also perfect for finely grating Parmesan, ginger, garlic, and even a little dark chocolate over yogurt or fruit.

I’ve had my Microplane for more than a decade, and it continues to be one of the most reliable tools in my kitchen.

My Nutrition Tip: Combine fresh lemon zest, olive oil, Dijon mustard, and lemon juice for a simple homemade salad dressing.

4. Vitamix High-Performance Blender

If there’s one kitchen appliance that demonstrates the value of investing in quality, it’s my Vitamix.

I’ve owned mine for more than 12 years, and it continues to perform beautifully. A high-powered blender makes it easy to prepare everything from creamy vegetable soups and smoothies to nut butters, nut milks, dips, dressings, sauces, and frozen desserts.

One of my favorite benefits is creating creamy textures using whole-food ingredients. Blended white beans, cashews, or cooked cauliflower can add body and richness to soups and sauces.

It’s also useful for reducing food waste. Slightly overripe fruit can become a smoothie, while leftover roasted vegetables can be transformed into a flavorful soup.

My Nutrition Tip: Blend cooked cauliflower or white beans into vegetable soup for a creamy texture without heavy cream. White beans also contribute protein and fiber.

5. Garlic Press

Fresh garlic is one of my favorite ingredients for adding incredible flavor to everyday meals. A good garlic press makes preparing it quick, easy, and virtually effortless.

Whether I’m making homemade pesto, tomato sauce, sautéed vegetables, marinades, or mashed potatoes, a garlic press allows me to add fresh garlic in seconds.

Garlic also contains naturally occurring sulfur compounds. When garlic is crushed or chopped, an enzyme reaction helps produce allicin, a compound that has been studied for potential health benefits.

I particularly like the OXO garlic press because it’s durable, comfortable to use, and designed to minimize waste.

My Nutrition Tip: After crushing garlic, let it rest for approximately 10 minutes before heating. This allows time for allicin to form, although cooking can still reduce its availability.

Air fryer for healthy cooking

6. Air Fryer

If you’re looking for a way to make healthy cooking faster, easier, and more delicious, an air fryer deserves a place in your kitchen. It’s one of my favorite tools for preparing crispy, flavorful foods without the need for deep-frying.

An air fryer works by circulating hot air around food, creating a crispy exterior while keeping the inside tender. From roasted vegetables and crispy chickpeas to salmon, chicken, tofu, and homemade sweet potato fries, the possibilities are endless.

Air fryers typically preheat quickly, cook many foods faster than a conventional oven, and make preparing smaller portions especially easy. They’re perfect for busy weeknights when you want something nutritious without spending a lot of time in the kitchen.

From a nutrition perspective, air frying can reduce the amount of added oil needed compared with deep-frying while still delivering a crispy texture. It’s also a great way to make vegetables more appealing, particularly for family members who aren’t enthusiastic about eating them.

My Nutrition Tip: Try air-frying broccoli, Brussels sprouts, cauliflower, or chickpeas with a little extra virgin olive oil, garlic, and your favorite seasonings. You’ll get delicious caramelized flavor and a satisfying crunch while adding fiber and beneficial plant compounds to your meal.

Healthy Cooking Starts with Simple Habits

You don’t need an elaborate kitchen or expensive equipment to eat well. But having a few reliable tools can make preparing nutritious meals easier, more efficient, and more enjoyable.

My philosophy is simple: focus on fresh, whole-food ingredients, experiment with flavors and textures, and find ways to make cooking work for your lifestyle.

These kitchen essentials help me do just that, and I hope they inspire you to spend a little more time creating delicious, nourishing meals at home.
